Since the sale of Nine Suns to Realm Cellars, Flora and Jason Chang continue to stay busy with Plinth, their newer wine label they began a few years ago. Under the winemaking direction of Philippe Melka and continued relationship with Realm Cellars, Plinth produces its own expression of Pritchard Hill with a very limited batch of Houyi Vineyard Cabernet Sauvignon wines. At an elevation of nearly 1300 feet, the 22-acre vineyard sits above the fog line, its vines soaking in the morning sun. The vineyard is full of dense, volcanic rock. This unique soil provides an environment for the vines to produce concentrated fruit. This newly released 2021 Cabernet Sauvignon is comprised of 100% Cabernet Sauvignon from Houyi Vineyard and opens with “aromas of fennel, allspice, blackberry, dark cherry, and currant. The well-structured palate showcases chalky and robust tannins typical of the2021 vintage. Yet the tannins do not mask the refreshing minerality which mingles with charming red berries. The wine's persistent finish closes with a lingering note of cocoa.” Winemaker Philippe Melka used solely Taransaud T5 barrels to coax the wine’s lush elegance into the bottle.
