We have long been fans of sister brands Jonata and Hilt from the Central Coast. We were delighted to encounter The Paring, the approachable expression meant for more youthful drinking also made by The Hilt winemaker Matt Dees. Given the impressive vineyard sources throughout Santa Barbara for The Hilt and Jonata, The Paring is naturally able to incorporate incredible fruit sources. Comprised of 60% Cabernet Sauvignon, 19% Cabernet Franc, 14% Merlot, and 7% Petit Verdot, the wine is aged in 55% new and 45% neutral oak for 22 months. It has received rave reviews from Antonio Galloni and Jeb Dunnuck. Ultra satisfying notes of espresso, anise, and plum skin make for a wine delicious on its own or at the dinner table.
The Paring was born in 2006 out of a desire to explore, experiment and excite—without rules. Made from the vineyard blocks that are either too young or don't fit into the vintage style of the highly acclaimed JONATA and The Hilt wines—The Paring is a cut of each estate. The grapes are sourced primarily from three Santa Barbara regions on the vanguard: Santa Ynez Valley, Sta. Rita Hills, and Santa Maria Valley.
