Deep Time began in the 2001 vintage as an experimental cuvée exclusively for the mailing list. Vintner Jayson Woodbridge produces a few barrels of this special Cabernet each vintage. It ages for 48 months in barrel and offers more concentration than the regular vineyard designated cuvées. It is extremely rare for a wine to be aged this long without resulting in over-oaked wine, but they have managed to do just that. This 2013 library offering comes solely from Ark Vineyard. “Medium to deep garnet-purple colored, after more than three years in barrel, the 2013 Cabernet Sauvignon Ark Vineyard Deep Time delivers the goods with super-charged scents of warm black cherries, cassis, blueberry compote, dried mulberries and candied violets plus a provocative undercurrent of cigar box, pencil lead, tar, tapenade and anise. The rich, hedonic, full-bodied palate provides a firm, finely grained frame to support the voluptuous fruit, followed by a seamless, earth-laced finish.” We were the first to take a significant position with Hundred Acre beginning with their debut 2000 vintage when I was with Dean & DeLuca and since then, we have had the opportunity to enjoy and share every release. 12 bottles are available.
